Chef de Partie, MGM Cotai – AJI
Chef Ricardo is Chef de Partie at MGM Cotai – AJI. Nicolau joined MGM Cotai in November 2017. The 26 year old is a native of Lisbon, Portugal where he completed his 3-year culinary school before moving to Asia. After graduation he got his first opportunity to work as a chef overseas, in Macau, which was 7 years ago.
Previously, he worked at the Four Seasons Hotel Macau in Western cuisine, Portuguese and Macanese buffet, banquet and back of the house for 3 years. He then worked, from opening, at the two Michelin Star, The Tasting Room - City of Dreams Macau, French fine dining restaurant as Chef de Partie. After that, he worked at Aurora Macau Italian restaurant before joining Aji.
